Made a Rachael Ray recipe for roasted tomato vodka sauce that used mascarpone instead of heavy cream. I can’t wait to actually eat it!

It didn’t matter that I left work a little late, that my manicure and pedicure took forever, that I still had to go to the store to pick up the ingredients, that it was 8:30pm before I even started the dish.
I was making this last night and nothing was going to stop me.
(Official title: Scalloped Tomatoes with Croutons but I think that the title should actually include “homemade croutons” because dude, I did not pour them from a box. I toasted them myself!)
It’s a bit bizarre to have such an intense craving for something you’ve never actually tasted before, but I just knew I would love it.
It combines my three favorite things in life (bread, tomatoes, cheese) into something other than pizza.
Delicious. Make it. Smitten Kitchen (via Ina Garten) never steers me wrong.

Great minds think alike!  I saw this post on Smitten Kitchen this morning and though ”I have to make this!”  :)  Can’t wait for it…
