culinary exploration

Follow me through the adventures that take place in my kitchen, in restaurants or in other kitchens. Cooking and food are my passions and I want to share my experiences of cooking, baking and eating with you.
I'm a Greek self-taught cook who lives in Chicago. I learned a lot about cooking from both of my grandmothers, my mom and dad, family and friends. Passing on timeless traditions through food is one thing I strive to do in life.

These are my journeys through culinary exploration...

Paella con Costillas from Cafe Iberico
This paella was so-so.  I always order a paella from a tapas restaurant if it’s on the menu and this was one of their specials for the night.  The rice was phenomenal, but the pork ribs were bland and flavorless.  All the flavor was in the rice and that left me disappointed.  Just look at those ribs - they looks so juicy and tasty, and it was a big let-down when they were far from flavorful.
I would rate Iberico 3 out of 5 stars.  The service was great, the restaurant is big so it can accomodate large parties and our waiter helped us out with a funny prank of a dessert for my friend’s birthday.  However the food was just average.  Out of the 10-12 tapas we ordered, I was only satisfied with a few of them.
From what I hear (haven’t been there yet), if you want tapas - go to Cafe Ba Ba Reeba to get the best in Chicago.

Queso de Cabra al horno from Cafe Iberico
Warm goat cheese in a spicy tomato sauce served with crunchy pieces of toast.
This is the first time I’ve had queso de cabra from a tapas place where they served pesto toast as the dippers.  I really enjoyed the extra flavor it added to the dish.
