Chocolate Peppermint Bark Cookies

i really like this twist on traditional peppermint bark. i really think the shortbread could mellow out the chocolate & the mint, in a really perfect way.

My love for chocolate, peppermint and shortbread welcomes the idea of these cookies!!!
