Fried Catfish with fried cornbread, collard greens and macaroni & cheese from Kountry Kitchen in Indianapolis.
Everything about this meal was absolutely delicious. The catfish was crunchy, but not greasy and the breading was full of flavor. The greens were rich and delicious. And the mac was gooey and silky. If you are in Indianapolis and have a craving for soul food… this is the place to go. I’m still regretting not ordering chicken and waffles!
P.S. Get the sweet tea.
Cornbread makes me happy. Especially during the fall/winter season when I’m making soups and chilis almost every week. It’s the PERFECT partner to a steamy bowl of something comforting.
The Girl Who Ate Everything has a great, simple recipe for cornbread that makes my mouth water just reading it. I’m a big fan of the use of buttermilk in recipes. I see this happening in my kitchen VERY soon!
