CHRISTMAS DAY FRENCH TOAST CASSEROLE
After the family Christmas Eve party, my mom and I usually quickly put something together for brunch the next morning.  We made this last year and it was pretty simple, so we went for it again this year.  Click the photo above for the recipe.

Gyro Omelete also from Cosmo’s
My best friend is vegetarian and got the gyro omelete without the meat.  It has feta, green peppers, tomatoes and red onion with a side of tzatziki sauce.  Let me just tell you - tzatziki on eggs is DELICIOUS!!!

Cosmo’s is a locally owned breakfast joint in my home town that has some of the best breakfast in town.  And I’m not just saying that because a Greek family we know owns it.  :)

Eggs Benedict with Crispy Prosciutto and a side of House Potatoes
My favorite breakfast/brunch meal is a good eggs benedict.  I liked this version because it replaced the Canadian bacon (which I’m not a huge fan of) with crispy prosciutto.  Now I prefer my benedict to come with prosciutto because it was the BEST combination of salty pork, rich egg yolks from the poached eggs, tangy hollandaise and buttery, crusty english muffin.  The potatoes were mediocre, but assisted in cleaning up the remaining egg yolk and sauce.

french toast orgy - stuffed with mascarpone cheese topped with yogurt, home-made granola and fresh fruit

although the restaurant is tiny, it is DEFINITELY worth the wait.  the coffee was delicious and abundant, the staff was friendly and provided great service… and the FOOD was outstanding!  i’ve already made plans to go back. 
as you can see they aren’t stingy with their servings - i got three of those french toast “sticks” and could only manage to eat one.  i did eat the yogurt off the top so i could take the remaining two french toast sticks home for dinner without them getting soggy.  the home made granola was tasty and the fruit was actually ripe enough to devour. 
the prices aren’t too bad considering the portion of food they serve you.  if you live in chicago or are just visiting and need a good place to eat breakfast or brunch, i recommend you try this place out!
