CHRISTMAS DAY FRENCH TOAST CASSEROLE
After the family Christmas Eve party, my mom and I usually quickly put something together for brunch the next morning.  We made this last year and it was pretty simple, so we went for it again this year.  Click the photo above for the recipe.

Is there anything better than crispy potatoes with onions to compliment your breakfast/brunch meal??  I like mine with hot sauce, ketchup, salsa or sour cream.  Mmmm!

My mom brought some homemade granola for us to have for breakfast.

Rolled (old fashioned) Oats - NOT quick cooking
Corn Flakes
Dry-roasted Almonds
Raisins
Dried Cranberries
Honey

Put an even amout of each ingredient (except honey) in a mixing bowl and stir gently to combine.  Drizzle mixture with honey and toss to coat.  Spread evenly on a baking sheet.  Bake at 300° F for 1 hour, flip granola with a spatula, then bake for another 30 minutes.

Homemade granola is better than store bought because you can control your ingredients, make sure no high-fructose corn syrup is used and mix it up with the flavors you like.  We enjoyed ours over yogurt for breakfast or just to munch on as a snack!

A greciankitchen weekend breakfast:
Thinly Sliced Toasted Challah topped with Ricotta and Honey (with a side of strawberries)
Simple and quick - but very yummy.  There’s nothing better than a breakfast that is satisfying and quick to whip up.  The ricotta combined with the warm toasty challah brought a richness to this easy meal… the drizzle of honey provided the perfect sweet touch.
